Caribbean Shrimp Skewers

Yield: 12 appetizers

12 six-inch wooden skewers
1 pound shelled and deveined large shrimp

MARINADE
3 tablespoons orange juice
1 tablespoon lime juice
1 1/2 tablespoons extra virgin olive oil
1/3 cup mango chutney
1 teaspoon crushed garlic or 1/3 teaspoon garlic powder
3/4 teaspoon dried thyme
1/4 teaspoon salt
1/4 teaspoon ground black pepper

1. Soak the wooden skewers in water for at least 20 minutes (to prevent burning.)

2. Place all of the marinade ingredients in a blender and process until smooth. Pour half of the marinade over the shrimp, and toss to mix. (Reserve the remaining marinade for basting.) Set aside for 20 to 30 minutes, and then thread several shrimp onto each skewer.

3. Grill the skewers, covered, over medium coals (or broil under a preheated broiler) for about 6 minutes, turning occasionally, or until the shrimp turn opaque and are cooked through. Baste with the reserved marinade during the last half of cooking. Serve hot.
