Cinnamon-Pecan English Muffin Melts

Yield: 1 serving

1/4 cup plus 2 tablespoons nonfat or low-fat cottage cheese*
2 tablespoons chopped toasted pecans or 1 tablespoon pecans plus 1 tablespoon raisins
Sugar substitute equal to 1 to 1 1/2 tablespoons sugar
1 whole grain English muffin, toasted
ground cinnamon

1. Combine the cottage cheese, pecans, and sugar substitute. Stir to mix well and spread over the English muffin halves. Sprinkle some cinnamon over the tops.

2. Place under a preheated broiler for 2 to 3 minutes or until hot and bubbly. Serve hot.
