Simple Shrimp Skewers

Yield: 12 servings

12 six-inch wooden skewers
1 pound shelled and deveined large shrimp
2 to 3 teaspoons Old Bay seasoning (or use Greek or Cajun seasoning)
1 1/2 tablespoons extra virgin olive oil

1. Soak the wooden skewers in water for at least 20 minutes (to prevent burning.)

2. Place the shrimp in a large bowl, sprinkle with the seasoning, and drizzle with the oil. Toss to mix and set aside for 15 to 30 minutes. Thread several shrimp onto each skewer.

3. Grill the skewers, covered, over medium coals (or cook under a preheated broiler) for about 6 minutes, turning occasionally, or just until the shrimp turn opaque and are cooked through. Serve hot.
