Dijon-Dill Dressing

Yield: 7/8 cup

1/4 cup white wine vinegar
1/4 cup plus 2 tablespoons extra virgin olive oil or walnut oil
2 tablespoons water
1 tablespoon Dijon mustard
1 tablespoon honey
1 teaspoon dried dill
1/2 teaspoon salt
1/4 teaspoon ground black pepper

1. Combine all of the ingredients in a mini blender jar and blend until smooth.

2. Cover and chill until ready to serve.
