Pepperoni Party Pizzas

Yield: 24 wedges

4 pieces whole wheat or oat bran pita bread or flatbread (6-inch rounds)
3/4 to 1 cup marinara sauce
1 cup shredded reduced-fat mozzarella cheese
28 slices turkey pepperoni
olive oil cooking spray

1. Preheat the oven to 400 degrees F.

2. Place the pitas on a flat surface and spread each with a quarter of the marinara sauce to within 1/4 inch of the edges. Top the sauce on each pita with 2 tablespoons of the mozzarella and a quarter of the pepperoni slices. Finish off each pizza with a quarter of the remaining mozzarella, then spray the top of each pizza lightly with the cooking spray.

3. Bake at 400 degrees F for about 10 minutes or until the cheese is melted and the pizzas are lightly browned. Transfer the pizzas to a cutting board and cut each one into 6 wedges. Serve hot.
