Coconut-Covered Bananas

Yield: 4 servings

1/2 cup sweetened shredded coconut
1/4 cup finely chopped roasted salted peanuts
1 1/2 tablespoons nonfat or light mayonnaise
1 1/2 tablespoons nonfat or light sour cream
2 medium bananas

1. Place the coconut and peanuts in a shallow dish, and toss to mix. Set aside. Place the mayonnaise and sour cream in a shallow bowl, and stir to mix. Set aside.

2. Cut each banana crosswise into 2 pieces. Then cut each piece in half lengthwise.

3. Spread each banana piece with a thin layer of the mayonnaise mixture, covering all sides of the banana. Roll each piece of banana in the coconut mixture, turning to coat all sides.

4. Transfer to a serving platter, cover and refrigerate for 1 to 3 hours before serving.
