Yield: 8 slices
One recipe Bread Machine Pizza Dough or Hand-Rolled Pizza Dough 2 to 3 cups chopped fresh spinach 14 1/2-ounce can diced roasted garlic tomatoes, crushed and well drained or 3/4 cup marinara sauce 1/4 cup crumbled reduced-fat feta cheese 1/2 teaspoon dried oregano 1 cup shredded reduced-fat mozzarella cheese 1/4 cup thin slivers of red onion 1/4 cup chopped black olives
1. Preheat the oven to 425 degrees F.

Roll the pizza dough into a 14-inch circle and transfer to a 14-inch
pizza pan coated with cooking spray. Set aside for 5 to 10 minutes to
allow the crust to rise slightly.
3. Coat a small nonstick
skillet with cooking spray and add the spinach. Place over medium heat
and cook for a couple of minutes to wilt the spinach. Set aside.
4.
Top the crust with the drained tomatoes or marinara sauce, spinach, and
feta cheese. Sprinkle with the oregano and top with the mozzarella,
onions, and olives.
5. Bake for about 12 minutes or until the cheese is melted and the pizza is lightly browned. Serve hot.
