Delightful Deviled Eggs

Delightful Deviled Eggs

Yield: 12 appetizers

6 peeled hard-boiled omega-3-enriched eggs
1/4 cup nonfat or light mayonnaise
1 tablespoon spicy brown or Dijon mustard
pinch ground white pepper
2 to 3 teaspoons finely chopped fresh dill or chives (or 3/4 teaspoon dried) or 2 tablespoons finely chopped and drained sweet pickles
ground paprika

1. Cut the eggs in half lengthwise and remove the yolks. Place the yolks in a small bowl and add the mayonnaise, mustard, and pepper. Beat with an electric mixer until smooth. Stir in the herbs or pickles.

2. Spoon or pipe the yolk mixture into the hollowed out eggs. Sprinkle some of the paprika over the top of each egg. Transfer to a serving platter and serve immediately, or cover and refrigerate until ready to serve.
