Yield: 4 servings
3 tablespoons apple juice
2 tablespoons water
2 large firm but ripe pears, halved lengthwise and cored
2 tablespoons maple syrup
1 tablespoon margarine or butter
1/4 teaspoon ground cinnamon
3 tablespoons sliced almonds or chopped pecans or walnuts
1. Place the apple juice and water in a large nonstick skillet and stir
to mix. Arrange the pears, cut side down, over the juice mixture. Cover
the skillet and cook over medium heat for about 6 minutes or just until
the pears are tender. Add a little water during cooking if needed to
maintain at least 1/4 cup of liquid in the skillet.
2. Remove the pears from the skillet and place one pear half in each of 4 dessert dishes, cut side up.
3. Add the maple syrup, margarine or butter, cinnamon, and nuts to the
skillet and stir to mix. Cook and stir, uncovered, over medium heat for
a minute or two, or until the liquid is syrupy. Spoon the sauce over
the pears and serve immediately.
