Chocolate-Peanut Clusters

Yield: 30 pieces

2 1/2 cups whole grain cereal such as Kashi Go Lean Crunch, Raisin Bran Crunch, or Oatmeal Crisp with Raisins
3/4 cup chopped dark chocolate or semi-sweet chocolate chips
1/3 cup smooth peanut butter
Sugar substitute equal to 1/4 cup sugar
1/2 cup coarsely chopped roasted peanuts

1. Place the cereal in a large zip top bag, seal tightly, and coarsely crush the cereal to make about 1 3/4 cups. Set aside.

2. Place the chocolate and peanut butter in a large microwave-safe bowl. Microwave at high power for about 2 minutes, stirring after 1 minute until the mixture is melted and smooth. Stir in the sugar substitute.

3. Add the cereal and peanuts to the chocolate mixture and stir to mix well.

4. Drop level tablespoonfuls of the mixture onto a large baking sheet coated with waxed paper. Refrigerate for 1 hour or until firm. Store in an airtight container in the refrigerator or freezer.
