Yield: 12 servings
3 pounds fresh sweet potatoes, peeled and cut into 1-inch chunks (about 9 cups) 1/4 cup plus 2 tablespoons all fruit orange marmalade 1/4 cup plus 2 tablespoons reduced-fat margarine or light butter 1/3 cup orange juice 1/4 cup light brown sugar 1 teaspoon ground ginger 1/2 teaspoon ground cinnamon
1. Preheat the oven to 350 degrees F.

Place the potatoes in a 5-quart pot and cover with water. Bring to a
boil, and then reduce the heat to medium. Cover and cook for about 12
minutes, or until the potatoes are tender. Drain well.
3. Coat a 9-by-13-inch baking dish with cooking spray, and spread the potatoes evenly in the dish.

Combine the marmalade, margarine or butter, orange juice, brown sugar,
ginger, and cinnamon in a 1-quart pot, and whisk to mix. Place over
medium heat; cook and stir for a minute or two or until the butter or
margarine is melted. Pour the orange mixture over the potatoes and toss
to mix.
5. Bake uncovered for 20 minutes or until bubbly around
the edges. Stir the potatoes, and cook for an additional 20 minutes,
stirring a couple of times, until the liquid is thick and the potatoes
are nicely glazed. Serve hot.
