Marinated Summer Fruits

Yield: 6 servings

2 cups sliced fresh strawberries
2 cups diced fresh peaches
1 cup fresh blueberries
1 1/2 cups orange juice
1/2 cup Splenda
6 small sprigs of fresh mint (optional)

1. Place the fruits in a 2-quart bowl and toss to mix.

2. Combine the orange juice and Splenda and stir to dissolve the Splenda. Pour the orange mixture over the fruit and toss to mix.

3. Cover and chill for at least 2 hours before serving. Divide the mixture between six 8-ounce wine glasses or dessert dishes and top each dessert with a sprig of mint if desired.
