Light & Easy Hollandaise Sauce

Yield: 1 1/2 cups

2 tablespoons nonfat dry milk powder
1 1/2 tablespoons cornstarch
3/4 teaspoon dry mustard
1 cup nonfat or low-fat milk
1/4 cup fat-free egg substitute
3 tablespoons margarine or butter, cut into small pieces
2 tablespoons lemon juice
1/8 teaspoon salt

1. Place the milk powder, cornstarch, and mustard in a 1 1/2-quart microwave-safe bowl. Add about 3 tablespoons of the milk and whisk until smooth. Slowly whisk in the remaining milk and the egg substitute. Add the margarine or butter.

2. Microwave at high power for about 3 minutes, whisking every 45 to 60 seconds until the mixture comes to a boil and thickens. Remove from the microwave oven and whisk in the lemon juice and salt. Serve hot.
