Yield: 4 servings
4 whole wheat flour tortillas (8 to 10-inch rounds)* 1/2 cup light garlic & herb-flavored cream cheese 8 ounces thinly sliced roasted turkey breast 8 slices turkey pepperoni 8 strips (about 2-by-1/2-inch) roasted red bell pepper or 8 thin rings fresh red bell pepper 8 marinated artichoke quarters, drained (reserve 4 teaspoons of the marinade) 1/2 cup shredded reduced-fat mozzarella cheese 4 romaine lettuce leaves or 20 large fresh spinach leaves
1. Lay the tortillas on a flat surface and spread the bottom half of each one with a quarter of the cream cheese.
2.
Layer a quarter of the turkey, pepperoni, bell peppers, and artichoke
hearts over the cream cheese and drizzle with some of the marinade. Top
with some of the mozzarella cheese and lettuce or spinach, leaving a
1-inch margin on both sides.
2. Fold in the sides and roll the tortillas up to enclose the filling. Cut in half and serve immediately.
