Yield: 1 serving
2 slices dark pumpernickel or rye bread* 1 tablespoon nonfat or light mayonnaise 1 teaspoon Dijon mustard 2 ounces thinly sliced baked ham (or substitute turkey breast) 1/4 small Granny Smith apple, cored and very thinly sliced 1 ounce thinly sliced reduced-fat Swiss cheese 5 to 6 large fresh spinach leaves
1. Place the bread slices on a flat surface and spread each slice with some of the mayonnaise and mustard.
2.
Top one bread slice with the ham, apple slices, Swiss cheese, and
spinach leaves. Top with the remaining bread slice and cut the sandwich
in half.
3. Serve immediately, or microwave the sandwich for about 30 seconds to heat through.
