Slow Cooked Barbecue Pork Chops

Yield: 6 servings

1/2 cup plus 2 tablespoons barbecue sauce
6 well trimmed boneless pork chops (4 ounces each)
3/4 teaspoon garlic powder
1/2 teaspoon ground black pepper
2 medium yellow onions, halved and thinly sliced

1. Sprinkle both sides of the pork chops with some of the garlic powder and pepper. Coat a large nonstick skillet with cooking spray and preheat over medium-high heat. Add the pork chops and cook for a minute or two on each side to lightly brown.

2. Transfer the pork chops to a slow cooker and top with the onions.  Pour the barbecue sauce over the top. Cover and cook at high power for about 3-4 hours or at low power for about 6-8 hours, until the pork chops are very tender. Serve hot.
