Yield: 4 servings
1 pound frozen cauliflower or 5 cups fresh cauliflower florets
2 tablespoons reduced-fat margarine or light butter
1/4 cup nonfat or light sour cream
1/8 teaspoon salt
1 1/2 teaspoons finely chopped fresh dill or 1/2 teaspoon dried dill
1. Place the cauliflower in a microwave or stove-top steamer and steam for about 7 minutes or until tender.

Drain the cauliflower and place in the bowl of a food processor. Add
the margarine or butter, sour cream and salt, and puree until smooth.
Stir in the dill and serve hot.
