Cauliflower Puree with Garlic & Parmesan

Yield: 4 servings

1 pound frozen cauliflower or 5 cups fresh cauliflower florets
1/4 cup grated Parmesan cheese
1/4 cup nonfat or low-fat milk
2 to 3 teaspoons margarine, butter, or extra virgin olive oil
1 teaspoon crushed garlic

1. Place the cauliflower in a microwave or stove-top steamer and steam for about 7 minutes or just until tender.

2. Drain the cauliflower and place in the bowl of a food processor. Add the Parmesan cheese and milk, and puree until smooth.

3. Place the margarine or butter and garlic in a small nonstick pot and place over medium heat. Cook for about 30 seconds or until the garlic begins to turn color and smells fragrant. Add the garlic mixture to the cauliflower mixture and process to mix. Serve hot.
