Cheesy Mashed Cauliflower

Yield: 4 servings

1 pound frozen cauliflower or 5 cups fresh cauliflower florets
4 slices (3/4 ounce each) 2% milk American cheese

1. Place the cauliflower in a microwave or stove-top steamer and steam for about 7 minutes or just until tender.

2. Drain the cauliflower and place in the bowl of a food processor. Tear the cheese into small pieces, add to the cauliflower, and puree until smooth. Mix in a little milk if the mixture seems too thick. Serve hot.
