Honey-Roasted Pecans

Yield: about 2 1/4 cups

1/4 cup honey
3 tablespoons finely granulated natural cane sugar (or regular sugar)
pinch sea salt
2 cups pecan halves

1. Preheat the oven to 350 degrees F.

2. Combine the honey, sugar, and salt in a medium bowl and stir to mix well. Add the pecans, and toss to coat with the honey mixture.

3. Coat a large baking sheet with cooking spray, and spread the pecans in an even layer over the sheet. Bake for about 15 minutes, stirring the pecans every 3 minutes, until golden brown and glazed. Watch the pecans closely during the last few minutes of baking to prevent them from becoming burned.

4. Coat a clean baking sheet with cooking spray, and quickly spread the pecans in an even layer over the sheet. Use a fork to separate any pecans that are sticking together. Let the pecans cool completely then transfer to an airtight container. To maintain freshness, store in the refrigerator or freezer.
