1/4 cup fat-free egg substitute
1/3 cup finely ground whole grain cracker crumbs*
8 ounce log soft goat cheese (plain or coated with herbs)
1. Place the egg substitute in a shallow dish and the cracker crumbs in a separate shallow dish. Set aside.

Slice the goat cheese log into 8 rounds. Dip each round first in the
egg substitute and then in the cracker crumbs, turning to coat both
sides.
3. Arrange the goat cheese rounds in single layer over
the bottom of a shallow container. Cover and freeze until firm. (Note:
you can leave the rounds frozen for several weeks, and bake them as
needed.)
4. To bake, preheat the oven to 450 degrees F. Coat a
baking sheet with cooking spray and place the desired number of frozen
goat cheese rounds on the sheet (do not thaw before cooking). Bake
uncovered for 7 to 9 minutes, or until the outside is golden brown and
the cheese heated through and slightly soft. Remove from the oven and
let sit for 3 minutes before serving.
