1/4 cup nonfat or light mayonnaise
2 to 3 tablespoons sun-dried tomatoes in olive oil and herbs, drained and chopped
4 whole wheat flour tortillas (8 to 10-inch rounds)
8 ounces thinly sliced turkey or chicken breast or lean roast beef
3 ounces thinly sliced reduced-fat mozzarella or provolone cheese
1/4 cup chopped black olives
1/3 cup marinated artichoke hearts, drained and chopped
4 romaine lettuce leaves

Combine the mayonnaise and sun-dried tomatoes in a small bowl and stir
to mix. Lay the tortillas on a flat surface and spread the bottom half of each one with a quarter of the mayonnaise mixture.

Layer a quarter of the turkey and cheese over the bottom half of each
tortilla, leaving a 1-inch margin on both sides. Top the turkey and
cheese on each tortilla with a quarter of the olives, artichoke hearts,
and lettuce.
3. Fold in the sides and roll the tortillas up to enclose the filling. Cut in half and serve immediately.
