Sweet Potato-Apple Casserole

Yield: 10 servings

3 1/2 cups cooked 3/4-inch chunks sweet potatoes or 1 can (29 ounces) sweet potatoes in light syrup, drained and cut into chunks
20-ounce can no-added-sugar or reduced-sugar apple pie filling, coarsely chopped

TOPPING
1/4 cup toasted wheat germ
3/4 cup chopped pecans
1/4 cup plus 2 tablespoons light brown sugar
1/2 teaspoon ground cinnamon
2 tablespoons soft reduced-fat margarine or light butter

1. Preheat the oven to 350 degrees F.

2. Place the sweet potatoes and pie filling in a large bowl and toss to mix. Coat an 8-by-11-inch (2-quart) casserole dish with cooking spray, and spread the sweet potato mixture evenly in the dish. 

3. To make the topping, combine the wheat germ, pecans, brown sugar, and cinnamon in a bowl and stir to mix. Add the margarine and stir until the mixture is moist and crumbly. Sprinkle the topping over the sweet potato mixture.

4. Bake uncovered for about 30 minutes, or until the edges are bubbly and the topping is golden brown. Serve hot.
