Yield: 4 servings
5 cups chopped fresh spinach
1 teaspoon crushed garlic
3/4 cup canned artichoke hearts, chopped and well drained
1/4 cup nonfat or reduced-fat ricotta cheese
2 tablespoons grated Parmesan cheese
3/4 cup shredded reduced-fat mozzarella cheese
1 recipe Bread Machine Pizza Dough or Hand-Rolled Pizza Dough
3 tablespoons fat-free egg substitute
1 1/2 cups marinara sauce, heated (optional)
1. Preheat the oven to 400 degrees F.

Coat a large nonstick skillet with cooking spray and add the spinach
and garlic. Cook over medium heat for several minutes, tossing
frequently, until the spinach is wilted. Remove from the heat and stir
in the artichoke hearts. Add the cheeses and toss to mix. Set aside.

Divide the pizza dough into 4 equal pieces and roll each piece into a
7-inch circle. Place a quarter of the filling on the lower half of each
circle and fold the top half over the bottom to enclose the filling.
Press the edges of the dough to seal. Cut 3 slits in the top of each
calzone to allow steam to escape.

Coat a baking sheet with cooking spray, and place the calzones on the
sheet. Bake for about 12 minutes or until lightly browned. Serve
hot with the marinara sauce if desired.
