Yield: 16 slices
1 cup orange juice
3/4 cup chopped pitted dates
1 1/2 cups whole-wheat pastry flour
1/3 cup sugar
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 cup canola oil
2 tablespoons liquid egg substitute or 1 egg white, beaten
1 teaspoon vanilla extract
1/2 cup chopped pecans
1. Place the orange juice in a small saucepan and bring to a boil.
Place the dates in a bowl and pour the orange juice over the top. Set
aside to cool to room temperature.
2. Place the flour, sugar, baking powder, and baking soda in a large bowl, and stir to mix well. Set aside.
3. Add the oil, egg substitute, and vanilla to the date mixture and
stir to mix. Add the date mixture to the flour mixture, and stir just
until the dry ingredients are moistened. Fold in the pecans.
4. Coat the bottom only of an 8-x-4-inch pan with cooking spray (or use
two 3 1/2-by-5-inch pans). Bake for about 45 minutes (if using 2 small
pans, bake for about 30 minutes), or just until a wooden toothpick
inserted in the center of the loaf comes out clean.
5. Remove the bread from the oven, and cool on a wire rack for 15
minutes. Remove the bread from the pan and place on the wire rack to
cool thoroughly. Wrap and store overnight before slicing.
