Yield: 1 serving
1/2 cup chopped peeled apple
1/2 cup old-fashioned (5-minute) oatmeal
1 tablespoon toasted wheat germ or wheat bran
1/4 teaspoon ground cinnamon
1/2 cup nonfat or low-fat milk (or use evaporated nonfat or low-fat milk for extra protein)
1/2 cup water
TOPPINGS (optional)
1 1/2 tablespoon chopped walnuts or pecans
1 1/2 tablespoons raisins or dried cranberries
1. Place the apples and 1 tablespoon of water in a bowl (about 3 1/2
cup capacity). Place the bowl in a microwave oven and cover with a
microwave splatter shield. Cook at high power for 2 minutes, or until
the apples soften.
2. Add the oats, wheat germ or bran, and cinnamon to the apples and
stir to mix. Add the milk and water and stir again. Cover with
the splatter shield and cook for 2 minutes. Stir and cook for another
minute or two, or until most of the liquid is absorbed. Watch closely
during the
last part of cooking. Stir, if needed, to prevent the oatmeal from
boiling over.
3. Let sit for a minute or two before serving. Top with some additional
milk and low-calorie sweetener if desired. Sprinkle with toppings if
desired.
