Oat Bran Drop Biscuits

Yield: 8 servings

1 cup unbleached flour
1/2 cup oat bran
2 teaspoons natural cane sugar
2 teaspoons baking powder
1/4 teaspoon baking soda
3/4 cup nonfat or low-fat buttermilk
2 tablespoons canola oil

1. Preheat the oven to 400 degrees F.

2. Place the flour, oat bran, sugar, baking powder, and baking soda in a medium bowl and stir to mix well. Add the oil and enough of the buttermilk to form a thick batter. Stir just until well mixed.

3. Coat a medium baking sheet with cooking spray and drop mounds of batter onto the sheet, spacing them 1 inch apart, to make 8 biscuits. Bake for 10 to 12 minutes or until lightly browned. Serve hot.
