Sausage Gravy

Yield: 4 servings

1/2 cup evaporated nonfat or low-fat milk
1 1/2 cups nonfat or low-fat milk
3 tablespoons unbleached flour
8 ounces ground turkey breakfast sausage
1/4 teaspoon salt
1/8 teaspoon ground black pepper

1. Place the evaporated milk and flour in a pint jar with a tight fitting lid. Shake until smooth and set aside.

2. Coat a large skillet with cooking spray and preheat over medium heat. Add the sausage and cook, stirring to crumble, until nicely browned. Add the 1 1/2 cups of milk to the skillet along with the salt and pepper. Cook, stirring frequently, until the mixture begins to boil.

3. Slowly add the flour mixture, while stirring constantly until thickened and bubbly. Cook and stir for another minute or two.  Add a little more milk if necessary. Serve hot, over toasted whole grain English muffins or Oat Bran Drop Biscuits if desired.
