Easy Roasted Broccoli

Yield: 4 servings

1 pound frozen broccoli florets or cut fresh broccoli
1/4 teaspoon garlic powder
scant 1/4 teaspoon ground black pepper
scant 1/4 teaspoon salt
1 tablespoon extra virgin olive oil
2 tablespoons grated Parmesan cheese (optional)

1. Preheat the oven to 450 degrees F.

2. Coat a 9-by-13-inch pan with cooking spray, and add the broccoli. Sprinkle with the garlic powder, pepper, and salt. Drizzle with the olive oil and toss to mix.

3. Cover the pan with aluminum foil and bake for 15 minutes (10 minutes if using fresh broccoli). Remove the foil, stir, and cook for about 15 minutes more (10 minutes if using fresh broccoli), stirring every 5 minutes until tender and beginning to brown.

4. Serve hot, topping each serving with some Parmesan cheese if desired.
