Yield: 8 servings
1 3/4 pounds 95% lean ground beef
10-ounces frozen chopped spinach, thawed and squeezed dry
1 cup very finely chopped fresh mushrooms
3/4 cup very finely chopped onion
2 teaspoons crushed garlic
1 teaspoon dried oregano
1/2 teaspoon coarsely ground black pepper
8 multigrain or whole wheat burger buns
SAUCE
1/2 cup nonfat or light mayonnaise
1/2 cup chopped bottled roasted red peppers
TOPPINGS
1/3 cup crumbled reduced-fat feta cheese
8 slices tomato
8 slices red onion
8 leaves romaine lettuce
1. To make the sauce, combine all of the sauce ingredients in a mini blender
or food processor and process until smooth. Cover and chill until ready
to cook the burgers.
2. Combine the ground beef, spinach, mushrooms, onion, garlic, oregano,
and pepper in a large bowl and mix thoroughly. Shape the mixture into
eight 4-inch patties.
3. Grill the burgers over medium coals or cook under a broiler for
about 6 minutes on each side, or until the internal temperature reaches
160 degrees F and the meat is no longer pink inside. (To retain
moisture, avoid pressing down on the patties as they cook.)
4. Place each burger in a bun and top with some of the sauce, feta cheese, tomato, onion, and lettuce. Serve hot.
