Cranberry-Pear Conserve

Yield: 12 servings

3 cups diced peeled fresh pears (about 3 large)
2 cups fresh or frozen cranberries
3/4 cup pear nectar
1/4 cup light brown sugar
1/4 cup golden raisins
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground ginger

1. Combine all of the ingredients in a 3-quart pot, and stir to mix. Place over medium-high heat and bring to a boil.

2. Reduce the heat to medium-low, and boil gently with the cover on the pot slightly ajar for 7 to10 minutes, or until the cranberry skins pop open and the mixture is thick. Stir occasionally to prevent the mixture from boiling over.

3. Allow the mixture to cool to room temperature, then cover and refrigerate for several hours or overnight before serving.
