Yield: 1 1/2 cups
1 1/2 cups diced lean reduced-sodium baked ham
2 tablespoons finely chopped onion
3 tablespoons chopped and drained sweet pickles
1/4 cup plus 2 tablespoons nonfat or light mayonnaise
3 tablespoons nonfat or reduced-fat cream cheese
2 teaspoons spicy mustard
1/2 teaspoon ground paprika
1. Place the ham, onion, and pickles in a food processor and process,
pulsing for several seconds at a time, until the ham is coarsely
chopped.
2. Add the mayonnaise, cream cheese, mustard, and paprika and process
until well mixed and the ham is medium to finely ground, depending on
preference. Cover and chill until ready to serve.
3. Serve with whole grain crackers or use as a filling for celery sticks or finger sandwiches.
