Yield: 1 1/3 cups
8 ounces light (Neufchatel) cream cheese, softened to room temperature
1 to 2 tablespoons mango chutney
1/4 cup plus 2 tablespoons very finely chopped Granny Smith apple
3 tablespoons finely chopped roasted salted or honey roasted peanuts
TOPPING (optional)
2 tablespoons finely chopped parsley or roasted peanuts
1. Combine the cream cheese, chutney, apple, and peanuts in a small
bowl and stir to mix well. Spread the mixture evenly into a small
bowl and sprinkle the parsley or chopped peanuts lightly over the top
if desired.
2. Serve immediately or cover and chill until ready to serve. Serve
with whole grain crackers, celery and carrot sticks, and rolled up
slices of roasted turkey breast.
