Yield: 2 cups
8-ounces reduced-fat (Neufchatel) cream cheese
1/4 cup nonfat or light mayonnaise
1 cup finely shredded reduced-fat Cheddar cheese
2-ounce jar chopped pimentos, drained
1. Place the cream cheese and mayonnaise in a medium bowl and beat with
an electric mixer until smooth. Add the cheddar cheese and pimentos and
beat to mix well.
2. Cover and chill until ready to serve. Use as a filling for celery or finger sandwiches or serve with whole grain crackers.
