Swiss-Apple Tea Sandwiches

Yield: 16 sandwiches

8 slices dark pumpernickel bread
1/4 cup plus 2 tablespoons peanut butter
1 medium-large apple, sliced into very thin wedges
4 ounces thinly sliced reduced-fat Swiss cheese
20 large fresh spinach leaves

1. Place the bread slices on a flat surface and spread each one with about 3/4 tablespoon of the peanut butter. Top 4 of the bread slices with a quarter of the apple slices, Swiss cheese, and spinach leaves.

2. Top the sandwiches with the remaining bread slices with the peanut butter side facing in. Cut each sandwich into four triangles, and arrange on a serving platter. Serve immediately.
