Yield: 4 servings
2 cups fresh or frozen (thawed and undrained) raspberries
sugar substitute equal to 2 tablespoons sugar
2 tablespoons orange juice
6 ladyfingers (about 1 1/2 ounces)
2 cups low-fat or light vanilla ice cream
2 tablespoons sliced almonds
1. Place the raspberries in a bowl and mash with a fork. Stir in the sugar substitute and juice. Set aside.
1. Place 1 tablespoon of the raspberry mixture in the bottom of each of four 8-ounce wine glasses.
3. Crumble 3/4 of a ladyfinger over the raspberries in each glass. Top
the ladyfinger with 1/4 cup of the ice cream and 1 tablespoon of the
raspberry mixture.
3. Repeat the ladyfinger and ice cream layers. Spoon a-quarter of the
remaining raspberry mixture over each parfait. Top each serving with
some of the almonds, and serve immediately.
