Yield: 4 servings
3/4 cup sliced fresh mushrooms
1/2 cup chopped onion
1 pound 95% lean ground beef
1 1/2 tablespoons Worcestershire sauce
2 to 3 teaspoons spicy mustard
1/2 teaspoon ground black pepper
4 thin slices (about 2/3 ounce each) reduced-fat Cheddar cheese (optional)
4 whole grain burger buns
TOPPINGS
4 slices tomato
4 slices onion
4 leaves lettuce
Condiments (nonfat or light mayonnaise, mustard, ketchup, pickles) (optional)
1. Place the mushrooms and onions in a food processor and process until
finely chopped. Place in a large bowl and add the ground beef,
Worcestershire sauce, mustard, and pepper. Use a potato masher to mix
thoroughly. Shape the mixture into four 4-inch patties.
2. Coat a large griddle or skillet with cooking spray and preheat over
medium heat. Cook the burgers for about 4 minutes per side or until the
internal temperature reaches 160 degrees F. If desired, lay a slice of
cheese over each burger, cover, and cook for another minute or just
until the cheese melts. Alternatively, cook the burgers on an oiled
grill rack over medium coals.
3. Place each burger in a bun and top with some tomato, onion, lettuce, and your choice of condiments. Serve hot.
