For variety, substitute lobster or shrimp for part or all of the crab.
Yield: 4 servings
2 cups cooked crabmeat
1/3 cup finely chopped celery
1/3 cup thinly sliced scallions
1/4 cup plus 2 tablespoons nonfat or light mayonnaise
4 multigrain hot dog buns or rolls (1 1/2 ounces each), toasted if desired
4 leaves Boston lettuce
1 medium-small avocado, peeled and sliced
1. Place the crabmeat, celery, and scallions in a medium bowl. Add the mayonnaise and toss to mix.
2. Pry open the buns or rolls and line each one with a lettuce leaf.
Fill each bun with a-quarter of the crab filling and avocado slices.
Serve immediately.
