24 pitted whole dates
1/2 cup soft curd farmer cheese, reduced-fat (Neufchatel) cream cheese, or soft goat cheese
24 small pecan halves (or use whole or sliced almonds or pieces of walnuts)
1. Using a sharp knife, cut a slit along the length of each date. Open
each date along the slit enough to allow for adding a filling without
the date being opened completely flat.
2. Pipe or spoon 1 teaspoon of the cheese into each date and lightly
press a pecan half into the cream cheese. Serve immediately or cover
and chill for several hours before serving.
