Yield: 8 servings
2 1/2 cups small broccoli florets
2 cups small cauliflower florets
1/2 cup chopped red onion
1/2 cup coarsely chopped roasted salted cashews
1/2 cup golden raisins
DRESSING
3/4 cup nonfat or light mayonnaise
1 tablespoon mango chutney
1/8 teaspoon ground ginger
1/8 teaspoon ground white pepper
1. Place the broccoli, cauliflower, onion, cashews, and raisins in a large bowl.
2. Combine the dressing ingredients and stir to mix. Add the dressing
to the salad and toss to mix. Cover the salad and chill for at
least 2 hours before serving.
