Crispy Seasoned Oven Fries

Yield: 5 servings

1 1/2 pounds unpeeled Yukon Gold or baking potatoes, scrubbed and patted dry
1 tablespoon canola oil
2 teaspoons ground paprika
1/4 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon ground black pepper

1. Preheat the oven to 400 degrees F.

2. Cut the potatoes into strips that are about 3/8-inch thick and place in a large bowl. Add the oil, sprinkle with the seasonings, and toss to mix.

3. Coat 2 large baking sheets with cooking spray and arrange the potatoes in a single layer (not touching) on the sheets.

4. Bake for 12 minutes and then turn the potatoes with a spatula. Bake for an additional 10 minutes or until the potatoes are tender and nicely browned and crisp. Serve hot.
