Yield: 50 cookies
1/4 cup plus 2 tablespoons trans-free margarine (not reduced-fat) or butter, softened to room temperature
1 cup light brown sugar
2 tablespoons pure maple syrup
1/4 cup plus 2 tablespoons unsweetened applesauce
1 teaspoon vanilla extract
1 1/2 cups quick-cooking (1-minute) oats
3/4 cup whole-wheat pastry flour
3/4 teaspoon baking soda
3/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg (optional)
1 1/4 cups dark raisins or mixed dried fruits
1 1/4 cups chopped walnuts
1. Preheat the oven to 350 degrees F.
2. Place the margarine or butter, brown sugar, and maple syrup in a
large bowl, and beat with an electric mixer until smooth. Add the
applesauce and vanilla extract, and beat to mix well.
3. Place the oats, flour, baking soda, cinnamon, and nutmeg (if using)
in a medium bowl, and stir to mix. Add the flour mixture to the
margarine mixture, and beat to mix. Mix in the fruit and nuts.
4. Coat large baking sheets with cooking spray and drop level
tablespoonfuls of the dough onto the sheets, spacing them at least 2
inches apart. Flatten each cookie with the back of a spoon. Bake for
about 9 minutes, or until lightly browned.
5. Remove the cookies from the oven, and let cool on the pan for 2
minutes. Transfer the cookies to wire racks to cool completely. Serve
immediately, or store in an airtight container until ready to serve.
