Ice Cream with Honey-Glazed Pineapple

Yield: 4 servings

1 1/3 cups fresh pineapple chunks
1/4 cup plus 2 tablespoons pineapple juice
1 tablespoon honey
1 tablespoon butter
1/4 teaspoon ground ginger
3 tablespoons sliced almonds
2 cups nonfat or light no-added-sugar vanilla ice cream

1. Place the pineapple, juice, and honey in an 8-inch skillet and place over medium heat. Cover and cook for about 5 minutes or until the pineapple is tender (add a little more juice if needed).  Stir in the butter and ginger. Cook and stir until the butter is melted. Stir in the almonds and cook uncovered for an additional minute or two, or until the liquid is syrupy.

2. Place 1/2 cup of ice cream in each of four 8-ounce dessert dishes or wine glasses and top each serving with a-quarter of the pineapple mixture. Serve immediately.
