Salisbury Steak with Mushroom Gravy

Yield: 4 servings

1 pound 95% lean ground beef
1/4 cup oat bran
1/2 cup very finely chopped yellow onion
1 tablespoon Worcestershire sauce
2 teaspoons Dijon mustard
2 teaspoons dried parsley
1/4 teaspoon ground black pepper

SAUCE
2 cups sliced fresh mushrooms
12-ounce jar fat-free beef gravy

1. Place the ground beef, oat bran, onion, Worcestershire sauce, mustard, parsley, and pepper in a large bowl. Mix well with a potato masher and shape into 4 patties.

2. Coat a large nonstick skillet with cooking spray and preheat over medium heat. Add the patties to the skillet. Cook for a couple of minutes on each side or until nicely browned.

3. Scatter the mushrooms over and around the patties and pour the gravy over the top. Let the gravy come to a boil. Reduce the heat to medium-low. Cover and simmer for 15 minutes. Serve hot.
