Honey-Glazed Peaches

Yield: 4 servings

3 tablespoons orange juice
2 tablespoons water
3 1/2 cups fresh peach or nectarine slices
2 1/2 tablespoons honey
1 tablespoon trans-free margarine or butter
1/4 teaspoon ground cinnamon
3 tablespoons sliced almonds (optional)

1. Place the orange juice, water, and peaches in a large nonstick skillet. Cover and cook over medium heat for several minutes, stirring occasionally, just until the peaches are tender. Add a little water during cooking if needed to maintain at least 1/4 cup of liquid in the skillet.

2. Add the honey and the margarine or butter to the skillet and stir to mix. Cook uncovered, stirring occasionally, for a minute or two or until the juice is syrupy. Serve warm with a sprinkling of cinnamon and, if desired, some of the almonds. Serve over light vanilla ice cream if desired.
