Presto Pizzas

A basic recipe that can be varied many ways for a quick meal in a matter of minutes.

Ingredients:
Whole grain pita bread, flatbread or English muffins
Marinara or spaghetti sauce
Toppings (see suggestions below)
Part-skim mozzarella cheese

Assembly:
For each pizza, lay a piece of whole grain pita bread or flatbread (6 to 8-inch round) or 2 whole grain English muffin halves on a baking sheet and spread with 1/4 cup marinara sauce.

Sprinkle on your choice of toppings:
  • 3 to 4 tablespoons chopped cooked vegetables such as spinach, broccoli, asparagus, mushrooms, zucchini, artichoke hearts, roasted red bell peppers, or any combination
  • Several slices turkey pepperoni
  • 3 to 4 tablespoons cooked lean ground beef or turkey Italian sausage
  • 1 thin slice onion, separated into rings
  • 1 tablespoon chopped black olives
  • Pinch dried basil, Italian seasoning, fennel, or sage
Top with 1/4 cup shredded part-skim mozzarella cheese.

To cook:
Bake at 400 degrees F for about 8 to 10 minutes or until the cheese is melted and lightly browned. Serve hot.


Tips:
Whole grain pitas, flatbread, English muffins, and shredded mozzarella store well in the freezer so you can always have the makings for Presto Pizzas on hand. Place bread packages inside a freezer bag to maintain quality.

Nutritional Facts:
One pizza will range from about 250 to 350 calories, depending on choice of bread and toppings.
