Black Bean Tortilla Pizzas

Yield: 4 servings

4 whole wheat flour tortillas (8-inch rounds)
3/4 cup canned black beans, drain off any excess liquid
1/2 cup chunky-style salsa
1 cup shredded reduced-fat mild cheddar, Monterey Jack, or Mexican blend cheese
1/4 cup sliced scallions (optional)

TOPPINGS (optional)
1/2 cup nonfat or light sour cream
1 cup shredded lettuce

1. Preheat the oven to 425 degrees F. Mash the beans with a fork and stir in the salsa; set aside.

2. Lay the tortillas on 2 medium-large baking sheets and bake for 4 minutes.  Spread a-quarter of the bean mixture over each tortilla and top each with a-quarter of the cheese and scallions (if using). Bake for about 4 minutes more, or until the cheese is melted and the tortillas are lightly browned around the edges.

3. Cut each pizza into 6 wedges. Serve hot, topping each pizza with some sour cream and lettuce if desired.
