Classic Tuna Melts

Yield: 4 servings

2 cans (6 ounces each) chunk light or albacore tuna in spring water, well drained
1/3 cup finely chopped celery
1/3 cup finely chopped red onion or sweet white onion
1/4 cup plus 2 tablespoons nonfat or light mayonnaise
2 to 3 tablespoons finely chopped dill or sweet pickles
4 whole grain English muffins, split open and toasted
1 cup shredded reduced-fat cheddar cheese

1. Combine the tuna, celery, onion, mayonnaise, and pickles in a bowl and stir to mix.

2. Place the English muffin halves on a large baking sheet, toasted side up and spread each one with about 1/4 cup of the tuna mixture and 2 tablespoons cheese. Place under a preheated broiler for about 2 minutes to melt the cheese.  Serve immediately.
