Speedy Sloppy Joes

Yield: 8 servings

1 pound 95% lean ground beef or turkey
3/4 cup chopped onion
3/4 cup chopped green or red bell pepper
1/2 cup grated carrot
14 1/2-ounce can no-salt-added diced tomatoes
2 tablespoons no-salt-added tomato paste
1 packet (about 1.3 ounces) Sloppy Joe mix
8 whole grain burger buns

1. Coat a large skillet with cooking spray and add the ground meat. Cook over medium heat, stirring to crumble, for several minutes or until no longer pink. Add the onion, peppers, and carrots. Cover and cook for 5 minutes more or until the vegetables are tender.

2. Place the undrained tomatoes in a blender and blend until smooth. Add the blended tomatoes, tomato paste, and Sloppy Joe mix to the skillet and bring to a boil. Reduce the heat to maintain a simmer and cook covered for 10 minutes. Spoon over burger buns and serve hot.
