Razzleberry Gelatin

Yield: 4 servings

4-serving size package sugar-free strawberry, raspberry, or cranberry gelatin
3/4 cup boiling water
3/4 cup orange juice
1 1/2 cups frozen strawberries, chopped (about 1/4-inch pieces) and thawed
1 cup frozen raspberries, thawed

1. Place the gelatin in a medium bowl. Pour the boiling water over the gelatin and stir for 2 minutes to dissolve the gelatin. Stir in the orange juice. Add the berries along with their juices, and stir to mix.

2. Divide the gelatin mixture between four 8-ounce wine glasses. Cover and chill for several hours or overnight, until firm. Top with some light whipped topping if desired.
